Access to NMEA-2000 data off the boat

I received this question via email and think it would be good to let the greater wisdom here weigh in as well.  Here's the question:

 I have a vesper ais (with wifi), and verizon jetpack (which I will keep running) on my sailboat. The boat stays at a mooring with the a good bit of solar and enough energy to run the fridge and some instrument all the time. I want to be able to see what the wind is, depth etc, remotely. Is there (given the vesper ability to collect NMEA data and the jetpack) a 
SOFTWARE (ie cheap) solution to allow me to access the data elsewhere?

The thoughts I have that come to mind immediately are boat monitoring products.  FloatHub has the ability to relay all or nearly all of the data mentioned but does so via NMEA-0183 but fortunately the Vesper ought to be able to do the translation from NMEA-2000 to NMEA-0183.  Additionally, Siren Marine now has the ability to participate on the NMEA-2000 network and make that data available via their app.  

Products like Maretron's IPG100 allow you to connect the NMEA-2000 network to your boat network and then using Maretron's N2KView connect remotely, but that could well be overkill for your application.  

Those are the first three options that come to mind for me.  I'm not aware of any options that would work with just the hardware you've got in place but perhaps someone else has a more creative solution.

A few ways I could think of doing this:

SignalK - you could use a Raspberry Pi and install SignalK on it, use the Vesper as the SignalK data source, and then use Scott Bender's signalk-cloud plugin to push your data up to the cloud, so you can access it from anywhere. I've used this a number of times and it is great.

Another derivation of this, if you want more direct access, is to use a VPN service along with the Raspberry Pi so you can VPN from a phone, computer, or other device, back into your boat, and then use SignalK + InstrumentPanel (web view of gauges) to see what is going on, or even dedicated apps like WilhelmSK or NMEAremote on your mobile device to connect to your Vesper.

SignalK also allows you to use a number of services (IFTTT, Amazon, etc.) to send alerts for various conditions.

If you wanted longer term data and trends, then you can combine SignalK with Influx+Grafana and have lots of graphs and data to look through, and even set thresholds and alarms.

I use all of these on my boat.
